Applying for a new food service establishment, change in ownership or renovations
In 2017 the State of Connecticut adopted several portions of the FDA Food. In 2023 the State of Connecticut adopted the 2022 FDA Food Code. The majority of the new code continues to emphasize food safety but has some additional requirements. To view the 2022 FDA Food Code click here.
Some highlights include:
Class 2, 3, and 4 food service establishments must employ a Certified Food Protection Manager (CFPM). There certificate must be current.
Food Establishments are required to implement a Date Marking system for prepared, refrigerated, and ready-to-eat foods that are held for greater that 24-hours in a food establishment. Click here for guidance
All employees must sign an Employee Reporting Agreement. Click here
All food service establishment must have a Written Clean-up Procedure for Vomiting and Diarrheal Event. Click here

Food Allergens – a “written notification” of top allergens needs to be provided on the menu, a statement, on their website to inform customers
Inspection Reports – Notify customers that the most recent inspection report is available upon request
